Following on from my post of earlier today we ended up having a really good day. The four kids all gathered at my sons place and we decided to cook a carrot cake, a family favourite which they have all loved since they were kids. My daughter is Vegan so it presents its challenges but I’ve found a recipe that tastes fantastic and as good as any I’ve ever had.
Everyone joined in and it proved to be the best medicine for me. It gave me just the lift I needed and put some life back into me. It was wonderful to be surrounded by family and it did them good too. Jokes aside, this carrot cake is super good, it has a wholesome hearty vibe, while being moist, rich, and delicious.
